Strawberry cheesecake overnight oats


This has all the lovely flavours of strawberry cheesecake – but it’s healthy! There’s a layer of vanilla oats and strawberry yoghurt and it’s topped with strawberry syrup and almonds. Make the night before to have as a delicious, filling, fuss-free breakfast.

Shopping list for 2 people

For the oats layer:

100g rolled porridge oats
200ml oat milk
1 tsp honey
1/4 tsp vanilla essence

For the yoghurt:

130g fresh strawberries (plus extra to decorate)

2 tsp honey

200g Greek yoghurt

Flaked almonds (optional)

Method

1. Place the oat layer ingredients in a bowl. Stir until thoroughly combined. Set aside

2. Cut the strawberries into quarters

3. Place the strawberries in a bowl with the honey and mash until smooth

4. Mix half of the strawberry syrup into the yoghurt and stir until combined

5. Divide the oats evenly between two glasses or bowls

6. Spoon the yoghurt over the top of the oats and smooth down with the back of the spoon

7. Drizzle over the remaining strawberry syrup. Cover and place in the fridge overnight

8. In the morning top with a few flaked almonds and some sliced strawberries
